Omelette with Traditional Balsamic Vinegar of Modena 

Ingredients (for 4 people):
8 fresh eggs
1 medium-sized onion
3 teaspoons of Aemilia Traditional Balsamic Vinegar of Modena P.D.O. - "Affinato"
2 tablespoons of extra virgin olive oil
1 pinch of aromatic herb mix (rosemary, coarse salt, sage, basil, and garlic)
 
Preparation:
In a pan, add the extra virgin olive oil and the thinly sliced onion, then sauté until golden brown over low heat. Separately, in a bowl, beat the eggs well with the aromatic herb mix, blending everything thoroughly. Pour the mixture into the pan with the oil and onion. Note that the cooking will be quick; focus on achieving a nice golden color on both sides of the frittata. At this point, carefully slide it directly onto a warm plate, strictly excluding the oil.
Now, pour "The Balsamico" from a teaspoon, trying to spread it by tapping the spoon with your index finger.
This will result in an even distribution of the "Balsamico", which will arrive at the table at the peak of its fragrance, ready to win over all the diners.
